I've Never Made Homemade Noodles

One thing I miss about living so far away from "home" is Sunday dinner. Almost every Sunday we would get together with my grandparents at our house or theirs and have dinner. It was usually something simple, cheap, and comforting like meatloaf or ham and scalloped potatoes. One of my all time favorites though was beef and noodles. My mom would make it, but some how my Granny's version always tasted better.


Lately I have been missing those type of things from my childhood. Even though I have great friends here in NC there is nothing like a family Sunday dinner. So I thought I would try to recreate the moment - and of course I had to try and fix my favorite.

So I started around ten Sunday morning with the noddles. The recipe I found online said to use 2 eggs and 2 cups of flour. I thought I would be fancy and use the well method you always see on the cooking shows.




As with anything I do, I went gung ho and mixed all of the flour into my eggs. Needless to say it didn't turn out very well.


I tried and tried to roll out the dough but this unmovable blob was the best I got. So one emergency call home to Mom later, I started over. This time I took it slow and incorporated the flour bit by bit, like I should have in the first place. This time I got a much nicer dough to roll out.

As you can see there was a BIG difference! Next I rolled out the dough nice and thin and let it partially dry to cut at a later time.



I let them dry for about 3 hours and then went back and cut my noodles. I was not a very good noodle cutter! Mine were not very consistent in size and they were definitely not as thin as my Granny's. But not too bad for my first time.


Next I let them dry out for another 3 and a half hours until the accompanying roast was finished.

So once it was time to cook them I drained the juices from the roast I had made into a pan and added some canned beef broth as well to get enough liquid.


The house smelled so good all day! It really took me back to my childhood! I couldn't wait to dig in. The portion I took was WAY too big, but I did not care!

So for the review: They were good, but no Granny's noodles. I was afraid of getting them mushy, so they were a little too al dente. Next time I will try something different to cut them thinner. But the taste was sooooo good. I think I might be making meatloaf or ham and scalloped potatoes soon! I am so glad I attempted this challenge!
